Blackberry Cream Tart

This is a great pie and very easy to make. Often I use a purchased pie crust which makes it even easier and faster. Any fruit can be used, but a fruit that is cut (unlike the berries) produces a lot more juice so the mixture bakes to a much more fluid consistency. To use cut fruit, I suggest putting the fruit and sauce mixture in the bottom of a dish and bake it with the crust on top, like a cobbler.

Ingredients
2-1/2 cups Blackberries, fresh or frozen (thawed on paper towels)
1 11-inch Favorite Tart Pastry, unbaked
1 Egg
1 cup Whipping Cream, heavy
1 cup Sugar

Instructions
Sprinkle blackberries over Favorite Tart Pastry. Beat egg lightly in bowl. Blend in whipping cream and sugar. Pour over berries.

Bake at 350 F about 1 hour and 10 minutes.

Makes 10 servings.
