Favorite Tart Pastry

Ingredients
1 cup Butter, chilled, cut into 1/2-inch pieces
2 cups Flour
1 Egg
1 tbsp Whipping Cream, heavy
1 tbsp Lemon juice
1 tsp Sugar
1/4 tsp Salt

Instructions
Cream butter with flour. Add egg, whipping cream, lemon juice, sugar, and salt; mix well.

Place dough on floured surface and roll out to 12-inch circle, 1/8th inch thick. Carefully fold dough over floured rolling pin and transfer to 11-inch tart pan. Push dough into corners with fingers. Trim off excess dough by running rolling pin over top of tart pan. Pierce bottom and sides of pastry with fork.

Makes enough dough for one 11" tart
